I keep my recipes a fiercely guarded secret. I have collected them over the years tweaking them, of course. A lovely lady who stayed with us many years ago wanted the Banana Bread recipe. Being a meany I would not send it until she did a swap. She sent me two delicious cake recipes which I still use to this day. So, Helen, a big thank you.
The sheets of paper recipes are printed on are really not fit to be seen. Raged corners and splodges of this, that and the other all over them. I refuse to print clean ones. Never trust a clean recipe book in the second hand store. Obviously bought for the coffee table or to impress. Not used once for it’s intended purpose.
We are in Rosquil nearly ten and a half years. Thought we would be well retired by now but for so many of us the recession threw a spanner in the works. I have been persuaded by “The Koala” that sits on my shoulder helping me through all things like the minefield of Facebook etc it is time to share.
So below is our recipe for Granola. It is delicious with Greek Yogurt. It can be stored in a Kilner jar in the fridge or even frozen. It never lasts us long enough to do the latter. Best of all after a good nights sleep in Rosquil to wander down to the breakfast buffet and just help yourself is far easier all round.
Here is our recipe and of course add more or less of what you like!
3 cup Rolled Oats
1 cup Pumpkin Seeds
1 cup slivered un blanched almonds
1 cup coconut flakes
6 tablespoons sunflower seeds
6 tablespoons sesame seeds
3 tablespoons wheat germ
1/4 teaspoon cinnamon
3 tablespoons sunflower seed oil
3 table spoons honey
1 cup dried cranberries
Pre heat oven to 300 degrees. Toss all the ingredients together, except the cranberries in a large bowl. Everything needs to be coated, no dry bits. This takes a bit of arm strength!!
Spread Granola thinly on 1 or 2 baking trays and bake for roughly 45 mins, stirring once or twice so that the granola browns evenly.
Towards the end YOU MUST KEEP WATCH…. one second it will be ok, the next it will be burnt!
When it goes a golden colour all over and feels crunchy remove from oven and let it cool, toss in cranberries as it is cooling.
If you plan to eat it straight away (its hard not to!!) an air tight container will work otherwise refrigerate or freeze to keep it fresh!!
